I’m not the best cook. Baking on the other hand I have the upper hand. Or at least thats what I like to think. Regardless here is a super simple cookie recipe that you can make and not feel guilty because ingredients are not just few but healthy too!
I reccomend using this recipe when your bananas start turning brown. Since the only ingredients are bananas and oats this is a great breakfast option for people on the go. The options are unlimited for add ins as well! You can make it sweeter with cinnamon and sugar or stay on the healthy side and mix in dried fruit. Plus they only take 15 minutes to make and clock in at around 60 calories per cookie. YES! Dairy free. Gluten Free (use GF oats). Nut free. Vegan. Vegetarian. I think they’re a good breakfast (or healthy treat!) for whoever you are. That is unless you’re allergic to bananas or oats. Sorry!

- 2 Ripe Bananas
- 1 Cup of Oats
- 2 Tbsp Cinnamon
- 1/4 Cup Brown Sugar
- 1 Cup Chocolate Chips
- 1 Cup Nut of Choice
- 1 Cup Dried Fuit
- Preheat oven to 350 degrees F.
- Place oats in blender or food processor and blend until oats become the consistency of flour; it’s okay if it’s not perfectly ground.
- In large bowl combined mashed banana with oats until smooth. Add in some optional ingredients. Get creative!
- Spray baking sheet with nonstick spray. Drop dough by large tablespoons onto cookie sheet; flatten a bit with a rubber spatula. Bake for 9-12 minutes or until cookies are set. Remove from oven and cool on wire rack. Cookies will keep in a covered container for a few days, or they can be frozen and reheated. Makes about 16 cookies.
